WHITE BEAN SALAD

15 oz. can small white beans, drained and rinsed in a colander
- 1
medium cucumber, seeded and finely diced (about 1/4")
- 1
medium Roma tomato, seeded, and finely diced
- 2
TBSP. chopped fresh oregano, preferably Greek
- 4
TBSP. chopped fresh flat parsley
- good olive oil
- fresh lemon juice
- fresh ground salt & pepper to taste
Combine measured ingredients
in a bowl, add enough good olive oil to just moisten, juice of about 1/4th lemon
and salt and pepper. Serve at room
temperature or may be chilled.
Makes about 2 cups (2
servings)
